For the Bowl:
- 2 cups cooked wild rice (or brown/white rice)
- 2 grilled chicken breasts, sliced
- 2 cups corn (fresh, frozen, or canned)
- 1/4 cup cotija cheese
- 1/4 cup chopped cilantro
- 1 sliced jalapeño (optional)
- 1 avocado, sliced
- 1 lime, cut into wedges
For the Elote Sauce:
- 2 tbsp mayonnaise
- 2 tbsp Greek yogurt or sour cream
- 1 tbsp lime juice
- 1 tsp chili powder or taco seasoning
- Pinch of salt
- 1 garlic clove (minced, optional)
Instructions
- Char the Corn: Heat a dry skillet over medium-high. Add corn and cook until slightly charred, stirring occasionally (~6–8 mins).
- Cook the Chicken: Season and grill (or pan-sear) chicken breasts until cooked through (165°F). Slice thinly.
- Mix Elote Sauce: Whisk all sauce ingredients in a bowl until creamy and smooth.
- Build the Bowl: Start with rice, top with sliced chicken, charred corn, and drizzle with sauce.
- Garnish: Add cotija, jalapeño, cilantro, avocado, and lime wedges. Serve warm or cold!
