Description

  • 2 cups corn (fresh, frozen, or canned)

  • 1/4 cup chopped cilantro
  • 1 sliced jalapeño (optional)
  • 1 avocado, sliced
  • 1 lime, cut into wedges

For the Elote Sauce:

  • 2 tbsp mayonnaise
  • 2 tbsp Greek yogurt or sour cream
  • 1 tbsp lime juice
  • 1 tsp chili powder or taco seasoning
  • Pinch of salt
  • 1 garlic clove (minced, optional)

Instructions

  1. Char the Corn: Heat a dry skillet over medium-high. Add corn and cook until slightly charred, stirring occasionally (~6–8 mins).
  2. Cook the Chicken: Season and grill (or pan-sear) chicken breasts until cooked through (165°F). Slice thinly.
  3. Mix Elote Sauce: Whisk all sauce ingredients in a bowl until creamy and smooth.
  4. Build the Bowl: Start with rice, top with sliced chicken, charred corn, and drizzle with sauce.
  5. Garnish: Add cotija, jalapeño, cilantro, avocado, and lime wedges. Serve warm or cold!
