Description

These mini meatloaf muffins are a fun twist on a classic dish, perfect for gatherings or a quick weeknight meal. Packed with flavor and easy to customize!


Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • Optional: additional ketchup for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, milk, ketchup, onion, garlic, egg, Worcestershire sauce, salt, pepper, oregano, and thyme.
  3. Mix the ingredients until just combined, being careful not to overmix.
  4. Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full.
  5. Optionally, top each muffin with a little extra ketchup.
  6. Bake in the preheated oven for 25-30 minutes, or until the meatloaf muffins are cooked through and have a nice browned top.
  7. Allow to cool for a few minutes before carefully removing from the muffin tin. Serve warm.

Notes

  • These mini meatloaf muffins can be made ahead of time and stored in the fridge for up to 3 days.
  • They also freeze well; just reheat in the oven when ready to serve.
