- 8 oz penne pasta
- 1 lb chicken breast (cut into bite-sized pieces)
- 2 tbsp olive oil
- 1 tbsp butter
- 3 garlic cloves (minced)
- ½ cup onion (finely chopped)
- ½ tsp Italian seasoning
- ¼ tsp smoked paprika
- ¼ tsp red pepper flakes (optional)
- ½ cup sun-dried tomatoes (chopped, oil-packed)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ¼ cup reserved pasta water
- Salt & black pepper to taste
- Fresh basil for garnish
Instructions
- Cook pasta until al dente. Reserve ¼ cup pasta water and drain.
- Sauté onions in olive oil and butter until soft. Add garlic and cook 30 sec.
- Add chicken. Season with spices, salt, and pepper. Sear until golden and cooked through.
- Stir in sun-dried tomatoes, heavy cream, and Parmesan. Simmer until slightly thickened.
- Add cooked pasta and reserved water. Toss to coat and simmer for 2 minutes.
- Garnish with fresh basil and extra Parmesan. Serve immediately.

- Use freshly grated Parmesan for a creamier finish.
- Add spinach or mushrooms for extra veggies.
- Swap pasta for zoodles or GF pasta for dietary needs.
