This Homemade Koyo Berry Salt is a DIY version of the famous Oishii Koyo Berry Salt — a luxury flavored salt created in collaboration with Jacobsen Salt Co. Since the original is a limited-edition, often sold-out pink gourmet salt, this recipe lets you recreate the experience at home. Using artisan strawberry salt techniques, you can infuse flaky sea salt with strawberries to achieve a similar look, aroma, and flavor.


Ingredients

  • ½ cup flaky sea salt (like Jacobsen Salt or Maldon)
  • 2 tbsp Koyo strawberry juice (or 1 tbsp freeze-dried strawberry powder)

Instructions

  1. In a clean bowl, combine the sea salt flakes with strawberry juice (or powder).
  2. Mix gently until the salt is evenly tinted and infused.
  3. Spread on a parchment-lined tray and let air-dry for 24–48 hours.
  4. Once fully dry, store in an airtight container.
