Description

The Grouper Reuben Sandwich is a seafood twist on the deli classic — made with flaky grilled grouper, melted Swiss cheese, tangy sauerkraut, and creamy Thousand Island dressing, all grilled between slices of buttery rye bread. For the Grouper Fillets:

  • 2 grouper fillets (6 oz each)
  • Salt & pepper to taste
  • 1 tsp Cajun seasoning (optional)
  • 1 tbsp olive oil
  • Juice of ½ lemon

For the Sandwich Assembly:

  • 4 slices rye bread (marbled or seeded)
  • 4 slices Swiss cheese
  • ½ cup sauerkraut (drained well)
  • 34 tbsp Thousand Island or remoulade
  • 1 tbsp butter (for grilling)

Optional Toppings:

  • Pickle chips
  • Tomato slices
  • Coleslaw
  • Bacon strips

Instructions

Season & Cook Grouper:

  • Pat fillets dry, season with salt, pepper, and Cajun spice. Heat oil in skillet and cook fillets 3–4 minutes per side until golden and flaky. Finish with lemon juice.

Toast the Bread:

  • Spread butter on one side of each slice of rye bread. Toast on a skillet until golden.

Assemble Sandwich:

  • On unbuttered side of bread: layer cheese, cooked grouper, sauerkraut, sauce, and another cheese slice. Top with second bread slice, buttered side out.

Grill & Melt:

  • Return to skillet and press gently. Grill 2–3 minutes per side until cheese melts and bread is crispy.

Serve:

  • Slice diagonally and serve hot with chips, coleslaw, or pickles.

Notes

  • Drain sauerkraut well to avoid soggy bread.
  • Reheat leftovers by rebuilding the sandwich fresh with reheated grouper.
  • Use fresh grouper for best results; frozen fish may be too watery.
  • Brioche, sourdough, or gluten-free bread are good alternatives.
