Description

This garlic parmesan chicken meatloaf is juicy, cheesy, and anything but boring. Made with lean ground chicken, loads of garlic, and salty parmesan, it’s a lighter twist on a comfort food classic — perfect for weeknight dinners or weekend meal prep.


Ingredients

  • 1 lb ground chicken (93% lean)
  • ¾ cup grated Parmesan
  • 3 garlic cloves, minced
  • ½ cup breadcrumbs (or almond flour for low-carb)
  • 1 egg
  • 2 tbsp Greek yogurt or milk
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: ¼ cup chopped parsley, ¼ cup finely diced onion

🧄 Garlic Parmesan Glaze

  • 2 tbsp butter
  • 1 garlic clove, grated
  • 1 tbsp Parmesan
  • Optional: parsley, lemon zest

Instructions

  1. Preheat oven to 375°F (190°C). Grease a loaf pan or line a baking tray.
  2. In a bowl, gently mix all meatloaf ingredients until just combined.
  3. Shape into a loaf and transfer to pan or tray.
  4. Bake uncovered for 35–40 minutes or until internal temp hits 165°F.
  5. Mix glaze ingredients and brush over top during last 5–10 minutes.
  6. Let rest 5–10 minutes. Slice and serve hot!

Notes

  • Don’t overmix — it’ll make the meatloaf dense.
  • Glazing is optional but adds major flavor!
  • Use almond flour for keto version or GF panko for gluten-free.
