This hearty and comforting Crockpot White Chicken Chili is perfect for chilly days. Packed with flavor, it’s a crowd-pleaser!
Ingredients
– 1 lb boneless, skinless chicken breasts
– 1 can (15 oz) white beans, drained and rinsed
– 1 can (14.5 oz) diced tomatoes with green chilies
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 cup chicken broth
– 1 tsp cumin
– 1 tsp chili powder
– 1/2 tsp oregano
– Salt and pepper to taste
– 1 cup corn (frozen or canned)
– 1/2 cup sour cream
– 1/2 cup shredded cheese (optional)
– Fresh cilantro for garnish
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add white beans, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, oregano, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- About 30 minutes before serving, shred the chicken using two forks and return it to the pot.
- Stir in corn and sour cream, cooking until heated through.
- Serve hot, garnished with shredded cheese and fresh cilantro if desired.
Notes
Feel free to adjust the spices according to your taste. You can also add jalapeños for extra heat!
