Description

This hearty and comforting Crockpot White Chicken Chili is perfect for chilly days. Packed with flavor, it’s a crowd-pleaser!


Ingredients

– 1 lb boneless, skinless chicken breasts

– 1 can (15 oz) white beans, drained and rinsed

– 1 can (14.5 oz) diced tomatoes with green chilies

– 1 medium onion, diced

– 2 cloves garlic, minced

– 1 cup chicken broth

– 1 tsp cumin

– 1 tsp chili powder

– 1/2 tsp oregano

– Salt and pepper to taste

– 1 cup corn (frozen or canned)

– 1/2 cup sour cream

– 1/2 cup shredded cheese (optional)

– Fresh cilantro for garnish


Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add white beans, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, oregano, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. About 30 minutes before serving, shred the chicken using two forks and return it to the pot.
  6. Stir in corn and sour cream, cooking until heated through.
  7. Serve hot, garnished with shredded cheese and fresh cilantro if desired.

Notes

Feel free to adjust the spices according to your taste. You can also add jalapeños for extra heat!
