Description

This Creamy Tuscan Chicken Pasta is a delightful dish featuring tender chicken, sun-dried tomatoes, and a creamy garlic sauce, all tossed with pasta for a perfect meal.


Ingredients

  • 12 oz fettuccine or pasta of choice
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach, fresh
  • 1 tsp Italian seasoning
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
  4. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Pour in heavy cream and add Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.
  6. Add spinach and Italian seasoning, and cook until the spinach wilts.
  7. Slice the chicken and add it back to the skillet with the sauce. Add the cooked pasta and toss to combine.
  8. Serve hot, garnished with fresh basil if desired.

Notes

  • For a lighter version, you can substitute half-and-half for heavy cream and use grilled chicken.
