- 12 oz fettuccine or pasta of choice
- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup spinach, fresh
- 1 tsp Italian seasoning
- Fresh basil for garnish (optional)
Instructions
- Cook the fettuccine according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in heavy cream and add Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.
- Add spinach and Italian seasoning, and cook until the spinach wilts.
- Slice the chicken and add it back to the skillet with the sauce. Add the cooked pasta and toss to combine.
- Serve hot, garnished with fresh basil if desired.
Notes
- For a lighter version, you can substitute half-and-half for heavy cream and use grilled chicken.
