Ingredients
1 cup cottage cheese
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1 tablespoon sugar
1 teaspoon vanilla extract
1/4 cup milk
Butter or oil for cooking
Instructions
1. In a mixing bowl, combine the cottage cheese, flour, baking powder, baking soda, and salt.
2. In another bowl, whisk together the eggs, sugar, vanilla extract, and milk.
3. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Heat a non-stick skillet over medium heat and add a little butter or oil.
5. Pour 1/4 cup of the batter onto the skillet for each pancake.
6. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2-3 minutes until golden brown.
7. Repeat with remaining batter. Serve warm with your favorite toppings.
Notes
These pancakes are best served fresh, but can be stored in the refrigerator for up to 2 days. Reheat in a toaster or skillet.
