  • 1½ cups all-purpose flour (or oat flour)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon (optional)
  • ⅓ cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5″ loaf pan.

  2. Mash bananas in a large bowl. Add cottage cheese, eggs, maple syrup, and vanilla. Mix until smooth.

  3. In a separate bowl, whisk flour, baking soda, salt, and cinnamon.

  4. Combine dry and wet ingredients. Stir until just mixed. Don’t overmix.
