Ingredients
- 3 large ripe bananas, mashed
- ¾ cup cottage cheese (blended for smoothness)
- 2 large eggs
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- 1½ cups all-purpose flour (or oat flour)
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon (optional)
- ⅓ cup chocolate chips or chopped nuts (optional)
Instructions

Preheat oven to 350°F (175°C) and grease a 9×5″ loaf pan.

Mash bananas in a large bowl. Add cottage cheese, eggs, maple syrup, and vanilla. Mix until smooth.

In a separate bowl, whisk flour, baking soda, salt, and cinnamon.

Combine dry and wet ingredients. Stir until just mixed. Don’t overmix.
