These Cottage Cheese Banana Bread Bites are the perfect combination of healthy and delicious. Packed with protein and naturally sweetened, they make for a great snack or breakfast option.
Ingredients
2 ripe bananas
1 cup cottage cheese
1/2 cup oats
1/4 cup honey
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chopped nuts (optional)
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a mixing bowl, mash the bananas until smooth.
3. Add the cottage cheese, oats, honey, and vanilla extract, and mix well.
4. In a separate bowl, combine the baking powder, baking soda, cinnamon, and salt.
5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
6. Fold in the chopped nuts if using.
7. Spoon the mixture into a greased mini muffin tin, filling each cup about 3/4 full.
8. Bake for 15-20 minutes or until a toothpick comes out clean.
9. Allow to cool before removing from the tin.
Notes
These bites can be stored in an airtight container in the refrigerator for up to one week. You can also freeze them for longer storage.
