Chicken Tinga Tostadas are a delicious Mexican dish featuring shredded chicken in a smoky chipotle sauce, served on crispy tostadas and topped with fresh ingredients. Perfect for a quick weeknight dinner or a fun gathering!
Ingredients
– 1 lb boneless, skinless chicken breasts
– 1 medium onion, sliced
– 2 cloves garlic, minced
– 2-3 chipotle peppers in adobo sauce, chopped
– 1 tsp ground cumin
– 1 tsp dried oregano
– Salt and pepper to taste
– 1 tbsp olive oil
– 8 tostada shells
– Fresh cilantro, chopped, for garnish
– Diced avocado, for topping
– Crumbled queso fresco, for topping
– Lime wedges, for serving
Instructions
- Cook the chicken in a pot of boiling water until fully cooked, about 15-20 minutes.
- Remove the chicken, shred it, and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the sliced onion until translucent.
- Add garlic and cook for another minute.
- Stir in the chipotle peppers, cumin, oregano, salt, and pepper.
- Add the shredded chicken and a splash of the cooking broth to the skillet, mixing everything together and cook for 5-7 minutes.
- To serve, place the chicken mixture on tostada shells and top with cilantro, diced avocado, and queso fresco.
- Serve with lime wedges on the side.
Notes
For extra smoky flavor, you can add a bit of smoked paprika.
