Description

Chicken Tinga Tostadas are a delicious Mexican dish featuring shredded chicken in a smoky chipotle sauce, served on crispy tostadas and topped with fresh ingredients. Perfect for a quick weeknight dinner or a fun gathering!


Ingredients

– 1 lb boneless, skinless chicken breasts

– 1 medium onion, sliced

– 2 cloves garlic, minced

– 2-3 chipotle peppers in adobo sauce, chopped

– 1 tsp ground cumin

– 1 tsp dried oregano

– Salt and pepper to taste

– 1 tbsp olive oil

– 8 tostada shells

– Fresh cilantro, chopped, for garnish

– Diced avocado, for topping

– Crumbled queso fresco, for topping

– Lime wedges, for serving


Instructions

  1. Cook the chicken in a pot of boiling water until fully cooked, about 15-20 minutes.
  2. Remove the chicken, shred it, and set aside.
  3. In a large skillet, heat olive oil over medium heat and sauté the sliced onion until translucent.
  4. Add garlic and cook for another minute.
  5. Stir in the chipotle peppers, cumin, oregano, salt, and pepper.
  6. Add the shredded chicken and a splash of the cooking broth to the skillet, mixing everything together and cook for 5-7 minutes.
  7. To serve, place the chicken mixture on tostada shells and top with cilantro, diced avocado, and queso fresco.
  8. Serve with lime wedges on the side.

Notes

For extra smoky flavor, you can add a bit of smoked paprika.

Feel free to customize the toppings based on your preferences.
