Description
A hearty and cheesy beef casserole that brings comfort to the dinner table. Perfect for family gatherings or a cozy meal at home.
Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) kidney beans, drained
1 cup corn, frozen or canned
2 cups cooked pasta (elbow or penne)
2 cups shredded cheddar cheese
1 tsp chili powder
Salt and pepper to taste
2 tbsp olive oil
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add diced onions and minced garlic, sauté until translucent.
3. Add ground beef and cook until browned.
4. Stir in diced tomatoes, kidney beans, corn, chili powder, salt, and pepper.
5. Mix in the cooked pasta, and half of the cheddar cheese.
6. Transfer to a greased baking dish and top with remaining cheese.
7. Bake at 350°F (175°C) for 20-25 minutes, until cheese is bubbly and golden.
Notes
For a spicier kick, add jalapeños or hot sauce to the mixture.
This casserole can be made ahead of time and stored in the refrigerator before baking.
